- Refreshed culinary program for a 10 year old casual wood fired pizza restaurant in historic Jack London Square, including revised core menu and provided menu items for rotating lunch and dinner daily specials.
- Revised kitchen schedule to maximize existing management oversight and reduce overall kitchen labor.
- Reorganized elements of kitchen set up to maximize flow and best use of staffing levels.
Hotel Jerome, Auberge Resort Collection
Location: Aspen, CO
- Worked with management team to concept and launch high end tasting menu restaurant concept in Prospect restaurant space in anticipation of Michelin guide review. Work included creation of a 10 course menu featuring historical elements of the region. I also identified, sourced, and coordinated the purchase of all new serving pieces, as well as identified and sourced local farms and producers for all menu items, and developed the design and coordinated the production of the physical menu. Final handover included all supporting materials, including recipes, product specifications, and all related training materials for kitchen and dining room staff.

- Advised ownership on all aspects of renovation and launch of an 80 seat casual Italian neighborhood restaurant, including dining room and kitchen renovation and design, small wares including glass, china, and silverware, opening concept and menu, and key management staff recruitment.
